curry sweet-zucchini & beans

Here's an easy yet hardy recipe for you.

Add a little carbs & curry to your night with this mix of sweet potatoes, zucchini & black beans.


1/2 cup olive or avocado oil

2-3 medium sweet potatoes

3 small zucchinis (or 1-2 large)

1 cup black beans

Curry paste (store bought), to taste

Curry powder, to taste

Turmeric, to taste

Sea Salt, to taste


Chop your sweet potato & zucchini into small pieces/cubes.

Add about 1/4 cup of oil to a pan with your sweet potatoes & curry paste.

Season with curry powder & turmeric powder, all to taste.

I used about 2 Tbsp paste & 1-2 tsp of each powder.

Allow your sweet potatoes to cook for about 5-7 minutes with the lid on because they take the longest.

If your pan is becoming too dry, add about 1/4 cup on water.

After the sweet potatoes are a little soft, add your zucchini & cook for another 5-10 minutes with the lid on.

Once the zucchini & potatoes are mostly cooked, add your (pre cooked) beans and another 1/4 cup of oil.

You can add any additional seasonings plus some sea salt at this point too!

Cook for another few minutes, stirring, with the lid off until all the veggies are cooked to your liking.
